Once you get the basic concept down, you can experiment with any number of fruits or vegetables.  There are hundreds, if not thousands, of possible combinations to make this tasty condiment. The most common flavors in chutney are ginger, cinnamon, cloves, nutmeg, allspice, cardamom, raisin, mango, tamarind, citrus fruit, apricot, peach, coriander, mint, onion, and garlic. But those aren't the only options; there are plenty of innovative takes on chutney that use pineapple, coconut, rose hips, pumpkin, quince, plums, or carrots.

Black Garlic

Have you ever tried black garlic? If you’re curious about it, here’s what you should know.  Black garlic is aged fresh garlic with a smooth, soft texture and a rich, sweet taste that can be used to enhance the flavor of many savory (and some sweet!) recipes.  Black garlic is fresh, white garlic that has been aged by warming the garlic bulbs at about 140˚ to 190˚ F in high humidity for an extended period of time (often a month or more) until the cloves become tender and black in color.  During the aging process the cloves undergo the Maillard reaction as the heat creates changes in the amino acids and sugars in the garlic. This reaction is what gives black garlic its rich, tangy, molasses-like flavor and black color.

Garlic Honey

By combining fresh garlic with raw honey and allowing it to ferment, you end up with garlic that is sweetened and mellowed and garlic-infused honey that not only tastes good but packs a punch of health benefits too.    Garlic and honey have been used in traditional medicines around the world. The main health ingredient in garlic is allicin. It contains oxygen, sulfur, and other chemicals that give garlic antibacterial and disease-fighting properties.  A medical reviewTrusted Source notes that chopping or crushing fresh garlic cloves releases more allicin than using the cloves whole. However, chopped or crushed garlic can lose its allicin levels quickly. For maximum benefit, you’ll want to use fresh garlic as soon as possible.

Garlic Bread

Garlic bread (also called garlic toast) consists of bread topped with garlic and olive oil or butter and may include additional herbs, such as oregano.  Garlic bread is a type of bread flavored with garlic and butter. The garlic and butter are usually spread onto bread that has already been baked rather than being incorporated into bread dough. The types of bread most often used when preparing garlic bread are a basic French baguette or baton or a long Italian white loaf. The bread loaf is cut lengthwise and split open, then buttered and covered with minced garlic or sprinkled with garlic powder or garlic salt. The loaf is wrapped in foil and is then heated in the oven to melt the butter so that the flavor of the butter and garlic is absorbed into the bread. Instead of using butter, the loaves may be drizzled with extra virgin olive oil, a healthier alternative providing excellent flavor. The bread is then sliced and served immediately as an appetizer or accompaniment to a main meal. The bread may also be brought to the table without being sliced, with individual servings torn from the loaf as it is passed around the table.

You might even find yourself eating it straight from the oven .

The reason for chewing is that, aparently, the garlic keeps teeth clean from bacteria.  At our GROeat Garlic Farm, we are staunch believers in the profoundly magnificent health benefits of garlic. Alliums also include onions, chives, shallots and leeks. Garlic adds fantastic flavour to food, and often plays a supporting role in recipes rather than taking centre stage. We usually eat the bulb, although the leaves or ‘scapes’ are also delicious. New season or ‘wet’ garlic is milder in flavour. The gigantic Elephant garlic has cloves the size of large conkers but, despite its name, it’s actually more closely related to leeks.    WHEN IS GARLIC IN SEASON?   Garlic is in season from July to October, but it is available all year round as it’s dried and stored.  Garlic is a great source of a mineral called potassium. Unlike pickles in western countries, most Indian pickles are preserved in edible oils like mustard and sesame oil.  Garlic is preserved in oil with a generous addition of bold Indian spices.  Depending on the region, season, and local ingredients, the spice selection varies. In north India, most punjabi style achar are preserved in mustard oil. Down south, sesame oil is the choice for pickling.   Garlic Achaar or Indian Garlic Pickle is a hot, spicy and tangy condiment made with garlic, vinegar, spices, green chilies and mustard oil.  There are a few different ways to make Garlic Achaar, including a north indian punjabi style garlic achaar also known as Lahsun Ka Achaar or Garlic Ka Achar.

This Garlic Achaar Sauce can be enjoyed with rice, chicken, beef, roasted vegetables, soups, hummus and hamburgers.  It adds an exciting depth of flavor when mixed into marinades and stir fries. The flavors have complexity and are a great addition to noodle dishes or breakfast scrambles. Try it as a dipping sauce for potato chips, french fries, cheese sticks, or a plate of steamed or fresh vegetables.  Achaar is an integral part of south asian cuisine and Indian pickles have been part of culture and history for many years. They add the perfect punch to any meal and it is not uncommon to find dozens of jars of pickles in indian pantries.  This is a recipe for Indian Style Garlic Achaar sauce.  The results are amazing. Calamari Steak
with Garlic

Calamari is rich in protein, potassium, iron and vitamin B12.  Two recipe suggestions are presented here. Both incorporate garlic into the recipe.  If you are looking for hardneck garlic for your recipe, contact GROeat Farm in Montana

The word calamari comes from the Italian word for "squid." In the United States, it generally refers to a battered and deep-fried appetizer served in restaurants and bars, though some people use it interchangeably with the main ingredient, squid.   The salty black ink from this squid can be used to color pasta and risotto.  In many Asian countries such as Japan, China,Thailand, and Taiwan, squid is grilled or pan fried whole.  Calamari steaks are the flattened bodies of squid.  They are a lean protein option for a meal, plus they cook rather quickly in the right conditions.  While fresh is always best, you might discover it's easier to find calamari steaks in the frozen food section.   The mild flavor makes squid a good introductory seafood; it's also a versatile protein that cooks quickly and works well in a wide range of dishes, making it a good weeknight choice instead  chicken.  Fried calamari usually gets served with a garlicky aioli or a marinara sauce for dipping, and in any preparation, squid readily takes on the flavor of the dish.Classic fried calamari may be paired with just salt and lemon or with a dipping sauce.

How to Cook Calamari?  Squid lends itself to hot and fast cooking methods such as grilling, broiling, sautéing, and deep-frying. It can also be eaten raw, such as in sushi. Try a low and slow braise in white wine and garlic.  Or try tomato sauce or curry.   Although the tentacles are edible and often included on a plate of fried calamari, the body is the prime section of meat.  What Does Calamari Taste Like?   The meat is firm and white with a mild, slightly sweet, almost nutty flavor. Small fried squid are often firm and chewy, but they should not be rubbery.

Also called sopa castellana (Spanish soup), this traditional recipe is for every garlic and every soup lover around the world.

This soup is a favorite way to make use of leftover bread in the wintertime, which is sautéed and then simmered in the garlicky-paprika broth to help give it some body. Garlic Crostini
Florence Pugh | Vogu

Crostini is crusty bread brushed with olive oil, toasted in the oven or in the grill to perfection.  Crostini are typically made with a French baguette or another long loaf of bread. A crusty baguette works well for this recipe. Try using different types of baguettes including artisian, sourdough, rosemary or sage. This crunch, garlic bread offers the perfect contrast to a creamy spread or dip. The word crostini means “little crusts” in Italian.  Crostini also describes canapés consisting of small slices of toast with a savory topping such as cheese, shrimp, pâté or anchovies.  This Garlic Crostini recipe is an easy and quick appetizer that comes together quickly and can be served with virtually anything.  Garlic crostini is such an easy appetizer staple that you can eat with many other culinary dishes.  The added olive oil, garlic and sea salt bring another layer of flavor to your appetizer to the next level.  In this presentation by Florence Pugh, we slice a baguette in half, and brush each half thoroughly with olive oil and sprinkle lightly with salt.  Crostini is a little different from bruschetta.  Bruschetta, from the Italian word “bruscare” meaning “to roast over coals” is made by toasting whole, wide slices of a rustic Italian or sourdough type bread. Crostini are sliced and toasted from a smaller, round, finer-textured bread, more like a white bread baguette.   If you are looking for hardneck garlic for your recipe, contact GROeat Farm in Montana
